As many know I’m a CC fanatic, but I’ve found a 2nd home online. Lately, I’ve cared less about writing and more about my family and adding to my family, so it’s the perfect place to hang out with people that think along the same lines as I do. It’s a little bit of all the different cuisines that me and Sasquatch love. Mexican, American, a lot of Italian, Chinese and Mediterranean. I have 200 budgeted for groceries and after I go shopping tomorrow I’ll see if I can get him not to put too many extra things in the cart. I do meal planning 2 weeks @ a time because it’s more convenient for me to go shopping only once every other week.

Sasquatch

Sasquatch Yeti Bigfoot Bugerbear Yowie

I thought I'd explain a name you'll see often. I couldn't think of any name to call hubby other than that and how very boring. Then I remembered a nickname I'd given him early on in our dating.

Why Sasquatch? My grandma says he's "a mountain of a man". He's tall and generally big. He was teasing me as he's prone to do and I said, "Well, you are my Sasquatch." It kinda stuck.

A little background on my guy. He's a sports fanatic, Yankees fan, Red Sox hater, who works way too many hours and is usually the best husband anyone could ask for.

He cooks, almost better than I do, he cleans, a WHOLE lot better than I do, he makes me laugh non-stop, especially at my Type-A self. And he'll do anything to make me happy. He's pretty darn great.

Chicken Strips


Warning: Delicious, but fattening. I’ve made two considerations to make this recipe healthier. I only use sea salt in my kitchen. We are still young, but sodium intake is a major consideration in my household as my husband has high blood pressure. Canola oil is healthier than most cooking oils.



2 lb. Chicken breast (cut into strips)

2 c. Flour

1/4 c. Garlic Powder

2 T. onion salt

1 T. sea salt

2 lg. eggs

1/4 c. milk

1) Pour oil, I prefer canola oil, filling a large skillet half-way. Heat oil while preparing chicken.

2) Beat eggs and add milk.

3) Mix all dry ingredients: Flour, Garlic Powder, onion salt, sea salt in separate container.


4) Dip chicken in egg mixture, then dry mix. Set chicken aside until all is coated.

5) Place chicken in oil. Cook for 10 min or until golden brown.

In the Beginning

Who I am?

I’m a recently married, full time pre-law student, mother to a four-legged child and quite frankly in love with food. The food I love to cook is the food I ate as a child. Food infused with love. I bake often. My favorite dish to eat is spaghetti, although it’s far from my favorite to prepare as it is routine. Experimenting is often a bane of contention within my marriage, although my wonderful husband raves when things go correctly.
